100 Days of Tilapia: One Dish Dinner

One-Dish-Dinners often bring to mind...casseroles. Pot roast. Blandness. No more! How about making that one dish a cookie sheet! A great way to bake everything at once. Today I made Baked Tilapia Parmesan with Broccoli and Sweet Potato Homefries. It was great! Easy to make, easy to clean up and definitely easy to eat. I made two servings...one for today and one for tomorrow. I already figured I'd want it more than once! You can easily increase or decrease the servings to accomodate your needs.

Baked Tilapia Parmesan with Broccoli and Sweet Potato Homefries




2 Tilapia fillets
2 small Sweet Potatoes, peeled and diced
1 head of Broccoli
1 Roma Tomato, sliced
1/4 cup Olive Oil
Salt and Pepper to taste
1/2 tsp Chives, chopped
pinch of Paprika
1/4 tsp Garlic Salt
1/4 cup Parmesan Cheese, grated

Preheat the oven to 350 degrees. Toss the sweet potatoes in a third of the olive oil and salt and pepper. Roast 10 minutes or until just tender. Scrape the potatoes to one end of the cookie sheet. Next to them, place the broccoli and roma tomato. Drizzle with another third of the olive oil, salt and pepper. On the far end of the cookie sheet, place the tilapia fillets - lightly oiled, garlic-salted and peppered. Continue to bake for another 10 minutes or until the fish is done through and the broccoli is tender. Sprinkle the parmesan over all three and broil on high 2-3 minutes. Lightly season the fish with paprika and voila. One dish and in about 25 minutes? Eat your heart out Rachael Ray!
