Extra Crispy Oven Fried Chicken - Low Carb!

I inadvertantly made a pretty darn good replica of KFC's extra crispy chicken. Not what I was originally aiming for, but I'll take it!

Best part - totally low carb!



6 Chicken Drumsticks
1/4 Olive Oil
1/4 cup Parmesan Cheese (yep, the canned kind)
2 tsp Garlic Salt
1/2 tsp Mustard Powder
1/8 tsp Chili Powder
1/2 tsp Lemon Pepper seasoning, no salt

Preheat the oven to 400 degrees. Mix together the olive oil, seasonings and parmesan until it is a crumbly paste. Toss the chicken drumsticks in the paste and place, untouching, on a foil-lined cookie sheet (no muss, no fuss). Pat the tops of the chicken with the remaining seasoning paste and bake for approximately 20 minutes. To test for doneness, pierce the chicken close to the bone with a sharp knife. There should be plenty of clear-golden juice. Red or pink juice means you haven't gone far enough. No juice, too far.

Try this and tell me what you think! It tasted reasonably like the Colonel's with only FIVE herbs and spices...that's economy baby!

PS: I made a broccoli-cheddar baked potato as a side, Greek Yogurt instead of sour cream, natch.
