Coconut-Lime Sugar Cookies

This was the dessert (okay, so it turned into the appetizer) for our Memorial Day Taco Night! Even the die-hard coconut loathers wouldn't leave them alone!

Coconut Lime Sugar Cookies



1/2 c. butter or shortening
1 + 2 tbsp. milk
1 tsp. baking powder
1/4 tsp. salt
1/2 to 3/4 c. sugar for tops of cookies
1 c. sugar
1 tsp. vanilla
1 egg
1 1/2 c. sifted flour
juice of 1 lime
1/2 cup coconut (shredded and sweetened), plus more for topping

Cream together the bytter, sugar, vanilla and lime juice. In a separate bowl blend together the remaining dry ingredients, except the topping coconut and 2 tbsp of milk. Slowly incorporate the dry ingredients into the wet ingredients (it works out more evenly in this order.) Roll dough into 1 inch balls and dip into the remaining milk, then into the coconut. Place 1 1/2 inches apart on an ungreased cookie sheet. Bake at 350 degrees for 12 minutes, or until the cookies are a light golden brown.

PS: I saw one of my guests stash a napkin full of these in his pocket before he left! Seriously!
