Red, White and Blue Brownies!

I've been on a brownie kick of late...maybe more of a brownie binge. They are versatile, eeeeeasy to make, and always delicious. What's not to love? As a pre-holiday treat, I took in a new recipe of brownies to work...Red, White and Blue brownies, that is. Very patriotic, I must say!

The 4th of July just got a little bit hotter!



Red, White and Blue Brownies

1 roll Sugar Cookie Dough (I used pre-made, for extra eeeeease.)
1 pkg of Brownie Mix (plus ingredients in box directions)
1 pkg Cream Cheese, softened
2 Tbs sugar
Squeeze of Lemon Juice
1 cup fresh Blueberries
1 cup fresh Strawberries, chopped

Grease the bottom of a 13x9" baking pan (if using the "family size" brownie mix, otherwise a 9x9). Press the cookie dough uniformly around the bottom of the dish. Pour the brownie mix on top and spread gently with a spatula to level. Spoon the cream cheese, sugar and lemon juice into a ziploc bag. Massage lightly to combine the ingredients. Snip a small piece of the bag corner off to form a piping bag. Pipe long horizontal lines of the cream cheese mixture over the brownie batter. Using a butter knife, shallowly "cut" into the brownie batter and drag in vertical lines to form a design. Sprinkle the blueberries and strawberries evenly across the batter. Bake according to the brownie box directions. You may need to increase the baking time to accomodate the extra ingredients (mine took half an hour longer than called for!) You will know they are done when the center is set (no jiggling). Serve plain, or warm with vanilla ice cream!
